leg of rabbit with red peppers
Ingredients for three persons: 4
rabbit thighs cut in half (eight pieces in total)
2 large red peppers 3 tablespoons extra virgin olive oil
1 red onion, scallion-like
10 fresh tomatoes 1 shallot

I put the rabbit legs in a Pyrex baking dish with brandy diluted in water for two days in the freezer.

2 tablespoons extra virgin olive oil salt and pepper to taste
Boil the pasta, meanwhile, fry the sliced \u200b\u200bshallots in two tablespoons of extra virgin oil, add chopped tomatoes, a half with the skin up over the bacon, fry a couple of minutes, then add mushroom mixture, stirring well.
Continue stirring to prevent sticking to the sauce, gently press the tomatoes and continue cooking, if necessary add a bit 'of water from the pasta, regular salt and pepper.
Drain the pasta and pour into baking pan sauce, then briefly jump and Serve, serve hot.
